Fresh Coconut Pound Cake Making Tips

Hi welcome back...Today I wish to share with you another good taste of pound cake made from freshy coconut.

Ingredients :
  1. 1 cup of butter
  2. 3 cups of sugar
  3. 6 eggs
  4. 1 teaspoon of vanilla essence
  5. 3 cups of fine flour
  6. 1 cup of fresh coconut milk
  7. 1/4 teaspoon of baking soda
  8. 1/6 teaspoon of salt
  9. 1 carton (8 ounces) sour cream

Icing Making :

  1. 1/2 cup of vegetable shortening
  2. 4 cups of confectioners' sugar
  3. 1/4 cup water
  4. 1 teaspoon vanilla essence
  5. 1/8 teaspoon salt

Method :

  • Gradually adding sugar into softened cream butter in large mixing bowl
  • Beat until mixture is light and fluffy
  • Add in one egg at a time, beating well after each addition, beat in vanilla essence
  • Combine the flour, baking soda and salt
  • Add to cream mixture alternately with sour cream, begining and ending with flour mixture
  • Stir in coconut milk
  • Pour batter into greased 10-in tube pan
  • Bake at temperature 120 degree celcious for 1 hour 20 minutes, or until a toothpick inserted in center comes out clean
  • Cool for about 10 minutes before removing from the pan to let it cool down completely
  • Make icing by combine all icing ingredients in large mixing bowl and beat until fluffy
  • Frost top and sides
  • Yield for 16 Servings
