Ingredients :
- 1 cup of butter
- 3 cups of sugar
- 6 eggs
- 1 teaspoon of vanilla essence
- 3 cups of fine flour
- 1 cup of fresh coconut milk
- 1/4 teaspoon of baking soda
- 1/6 teaspoon of salt
- 1 carton (8 ounces) sour cream
Icing Making :
- 1/2 cup of vegetable shortening
- 4 cups of confectioners' sugar
- 1/4 cup water
- 1 teaspoon vanilla essence
- 1/8 teaspoon salt
Method :
- Gradually adding sugar into softened cream butter in large mixing bowl
- Beat until mixture is light and fluffy
- Add in one egg at a time, beating well after each addition, beat in vanilla essence
- Combine the flour, baking soda and salt
- Add to cream mixture alternately with sour cream, begining and ending with flour mixture
- Stir in coconut milk
- Pour batter into greased 10-in tube pan
- Bake at temperature 120 degree celcious for 1 hour 20 minutes, or until a toothpick inserted in center comes out clean
- Cool for about 10 minutes before removing from the pan to let it cool down completely
- Make icing by combine all icing ingredients in large mixing bowl and beat until fluffy
- Frost top and sides
- Yield for 16 Servings
