Stir Fried Sting Ray With Bean Paste and Stir Fried Chicken

(1) Stir Fried Sting Ray with Bean Paste

Ingredients :
  • 350g sting ray fish cut into pieces
  • 1 piece ginger, shredded
  • 2 red chili, shredded
  • 2 1/2 tablespoon bean paste

Seasoning :

  • 1/2 teaspoon sugar
  • 1/2 teaspoon light sauce

Method :

  • Heat 3 tablespoon of oil
  • Stir fry shredded ginger, chili and bean paste until fragrant
  • Pour in fish and seasoning
  • Continue stir fry for another 6 minutes
  • Add on 1 cup of water and continue to cook for another 6 minutes with medium heat...then serve

(2) Salty Fried Chicken

Ingredients :

  • 1/2 chicken about 325g, chopped into small pieces

Marinade :

  • 3/4 teaspoon salt
  • 1/2 teaspoon five spices powder

Dipping Sauce :

  • 2 red chili finely chopped
  • 5 shallots finely chopped
  • 2 tablespoon sour plum juice
  • 1/2 tablespoon balacan powder
  • Sugar add to taste

Methods :

  • Marinade chicken with marinated ingredient for 20 minutes
  • Heat one bowl of oil,pour in marinated chicken and deep fry with high heat till golden colour, dredge out drain off the oil
  • Mix well all the ingredient for dipping sauce for 10 minutes
  • Ready to serve together with deep fryied chicken.
